Ricotta Pesto Sourdough Toast (with Poached Eggs)

This ricotta pesto sourdough toast is vibrant and fresh with yolky poached eggs and flaky sea salt on top. This is the perfect way to start your morning! I love ricotta toast as is but it’s even BETTER with garlicky, flavorful pesto on top and yolky eggs.

My recipe, all starts with two thick slices of homemade sourdough bread. A generous layer of organic ricotta, a few dollops of good quality pesto, and then 3 yolky poached eggs. I also sprinkled flaky sea salt, pepper, and red pepper flakes.

For this sourdough toast recipe, I used homemade sourdough bread (check out my beginner bread recipe here) but you can easily use your favorite sourdough bread! One of my favorite brands that I usually can find in stores is Bread Alone Bakery.

How do You Poach Eggs?

Poaching eggs is one of the easiest ways to get a yolky egg every time. All you have to do is bring a large pot of water to a boil. I then cracked 3 large eggs into a small bowl and then use the bowl to gently place the eggs in the boiling water. Reduce the heat to medium or to a light boil. For yolky eggs like mine, cook for 2 minutes. If you’d like them to be more well done, go for 3 minutes. Using a slotted spoon take out your eggs and enjoy!

How do You Choose a Good Sourdough Bread?

Not all sourdough you’ll find in stores is REAL sourdough. These days if you’re not buying from a local sourdough bakery or making your own it can actually be really hard to find good quality sourdough bread. I usually can find Bread Alone Bakery’s Sourdough Bread (I get their whole wheat sourdough), Pan D’Avignon Sourdough Bread, or Berlin Bakery’s Spelt Sourdough Bread at certain grocery stores.

The best way to check if your sourdough bread is real:

  1. “Yeast” will NEVER be on the ingredient list. If you see “YEAST”, it means the brand is using commercial yeast to ferment its bread. When grains are fermented with an unnatural, rapid fermentation with commercial yeast we do not get any of the important health benefits of sourdough. Sadly, 99.9% of bread is made through unnatural fermentation and should be avoided.
  2. No additives or preservatives. Real sourdough bread should never contain additives or preservatives. Avoid!

Sourdough bread is unlike all other types of bread because they go through a long and slow natural fermentation with wild yeasts and lactic acid bacteria (LAB). This ancient, 6,000-year-old tradition has remarkable health benefits.  A long and slow sourdough fermentation transforms wheat and other grains easy to digest because it degrades gluten, removes anti-nutrients, and breaks down FODMAPs and starches. Sourdough foods are also chock full of fiber, prebiotics, vitamins, minerals, and antioxidants, making it an all-around microbiome superfood.

Why is this Ricotta Pesto Sourdough Toast healthy?

LET’S GET SPECIFIC:

Sourdough Fermentation. Sourdough bread is naturally fermented with sourdough starter instead of a rapid fermentation with yeast. Unlike commercial fermentation, a long and slow sourdough fermentation with sourdough starter makes wheat and other grains easy to digest because it degrades gluten, removes anti-nutrients, and breaks down FODMAPs and starches. Sourdough bread is also chock full of fiber, prebiotics, vitamins, minerals, and antioxidants, making it an all-around microbiome superfood.

Organic, High-Quality Flour: For my bread, I use a blend of organic (stone ground) whole wheat and white bread flour because it is richer in macronutrients like protein and fiber and micronutrients like vitamins and minerals.

Sourdough Bread: My recipe calls for two thick slices of homemade sourdough bread. I make mine from scratch using a recipe similar to this one but you can also use your favorite brand of sourdough too! I usually can find Bread Alone Bakery’s Sourdough Bread (I get their whole wheat sourdough), Pan D’Avignon Sourdough Bread, Berlin Bakery’s Spelt Sourdough Bread at certain grocery stores.

High-Quality Pesto (made with Olive Oil): I added a few dollops of good quality Gotham Greens pesto. You could also use homemade (even better!!) It can be hard to find a pesto made without seed oils (sunflower, etc.) – I always look for one that uses olive oil exclusively.

Ricotta: I added a generous layer of organic ricotta from Organic Valley.

Pastured Eggs: I love having eggs for breakfast as my main protein source. I usually have 3-5 eggs.

Clean, Simple Ingredients. Nothing artificial to make this sourdough toast!

Ingredients

  • 2 slices of sourdough bread lightly toasted
  • 3 eggs poached or fried
  • 1 tablespoon pesto
  • 1.52 tablespoons ricotta
  • flaky sea salt for sprinkling
  • roasted pepper flakes for sprinkling
  • pepper


Instructions

  1. Bring a large pot of water to a boil. I crack 3 large eggs into a small bowl and then use the bowl to gently place the eggs in the boiling water. Reduce the heat to medium or a light boil. For yolky eggs, cook 2 minutes. Using a slotted spoon take out your eggs and place to the side on a plate.
  2. Toast your sourdough slices in the toaster oven or toaster. I used the toaster for mine.
  3. Spread your lightly toasted sourdough bread with a layer of ricotta.
  4. Add a layer of pesto.
  5. Sprinkle with flaky sea salt, red pepper flakes, and pepper
