MIX DOUGH AND FIRST RISE: In a bowl or stand mixer, add all ingredients and mix until a ball forms. Let the dough rise at room temperature for 6 - 8 hours or until it doubles in size.
OVERNIGHT RISE: Place your dough covered in the fridge for an overnight proof. This is where your dough will develop flavor and L.A.B bacteria will get to work enhancing the nutrition of our dough. Remember, the longer we ferment the better for us it gets!
ROLL OUT AND SHAPE: The next day, roll out the dough on a floured work surface. You want the dough to be about ⅛" thick. Cut the dough into 8 equal pieces.
ADDING FILLING: Add 1-2 TBSP of peanut butter and jam to 4 of the rectangles. And then place the other dough on top. Use a fork to press and seal the edges. Then, brush with egg wash and sprinkle cinnamon on top.
BAKE: Preheat your oven to 350°F and line with baking sheet with parchment paper. Bake for 25 - 30 minutes or until golden brown.
