These healthy chocolate-stuffed mini sourdough pancakes are healthy and pillowy soft with bursts of warm dark chocolate in every bite. You only need 3 clean ingredients and Jesha’s Classic Sourdough Pancake Mix to make these easy sourdough pancakes.

- 1/3 cup Jesha’s Classic Sourdough Pancake & Waffle Mix
- 1/3 cup Water or Nut Milk
- 1 Pastured Egg (or Flax Egg)
- 1oz Chopped Dark Chocolate
Instructions
- Chop 1oz chocolate bar of choice into small squares.
- Whisk together eggs and water in a large bowl. Add mix and stir until just combined. PRO TIP: Batter should mimic the texture of a smoothie (thick but still pourable!)
- Heat a greased skillet over medium heat. Pour batter onto skillet using 3/4-1 tbsp of batter for each pancake.
- Add one square of chocolate to each pancake. Then cover with 1TSP of batter on top.
- Cook until the edges are slightly dry. Flip and cook for 1 more minute.
