Chocolate Chip Sourdough Bagels

These chocolate chip sourdough bagels are soft on the inside, a little chewy, and have bits of sweet chocolate chips in every bite. All you need is your favorite chocolate chips or chocolate bar to make these delicious chocolate chip sourdough bagels! I actually made mine into a “chocolate chunk” bagel by breaking up my favorite Eating Evolved Sweet and Salty Bar (I also love their no-sugar added Midnight bar too!)

If you watched my tiktok video, you know I made this chocolate chip sourdough bagel for Valentine’s Day with a peanut butter and strawberry jam cream cheese! I shaped them into a heart (you can see how in the video) but you can easily make these into a standard round bagel shape too!

For the strawberry peanut butter cream cheese, I just used organic strawberry jam, peanut butter, and Nancy’s cream cheese. The sweet & salty flavor complimented the chocolate chips perfectly. You can watch how I mixed the cream cheese here.

These homemade sourdough chocolate chip bagels are so easy to make, delicious and make the perfect treat for breakfast or as a snack! They were light and fluffy on the inside and the chocolate chips got all melty and gooey. So delicious!!

What Makes These Chocolate Chip Sourdough Bagels Healthy?

I believe all of our favorite foods including chocolate chip bagels can be made nourishing through a few simple tweaks! My recipe calls for clean ingredients, just a touch of honey to sweeten the dough, and a natural fermentation with sourdough. These chocolate chip sourdough bagels are the perfect nourishing treat, snack, or breakfast. For breakfast, I would probably use unsweetened chocolate chips or an unsweetened chocolate bar like this one because I’m not crazy about sweets in the morning!

LET’S GET SPECIFIC:

Sourdough Fermentation. These bagels are naturally fermented with sourdough starter instead of a rapid fermentation with yeast. Unlike commercial fermentation, a long and slow sourdough fermentation with sourdough starter makes wheat and other grains easy to digest because it degrades gluten, removes anti-nutrients, and breaks down FODMAPs and starches. Sourdough is also chock full of fiber, prebiotics, vitamins, minerals, and antioxidants, making it an all-around microbiome superfood.

Organic, High-Quality Flour: I use a blend of organic (stone ground) whole wheat and white bread flour because it is richer in macronutrients like protein and fiber and micronutrients like vitamins and minerals.

Organic Chocolate Chips or Chocolate Chunks: For my chocolate chip bagel, I used chunks of my favorite Eating Evolved Sweet & Salty chocolate bar. It’s organic and lightly sweetened with coconut sugar.

Sourdough Bagel Baking Schedule

This is what a typical bagel-making schedule looks like for me.

P.S. Temperature is one of the single most important factors that affect fermentation. The warmer your place, the faster your dough will ferment. So please use my schedule as simply a jumping-off point for your own.

Prepare sourdough starter

Either feed your sourdough starter the night before to prepare or if your sourdough starter is in the fridge be sure to feed it every 12 hours, 3 days before you plan to bake.

Day One
  • 10 AM – Mix bagel dough, cover and let sit at room temp until it doubles in size (6-8 hours)
  • 6 PM – Place dough covered in the fridge for an overnight fermentation (10+ hours). This step is to develop flavor and nutrition… it’s optional, but highly recommended.
day two
  • 8 AM – Divide bagel dough, shape and cover with tea towel. Let it rise for 2 hours.
  • 10 AM – Prepare boiling water and preheat oven.
  • 10:15 AM – Boil bagels, add toppings and bake.

Here’s what you’ll need to make sourdough chocolate chip bagels at home.

  • Olive Oil: Used to grease the bowl or plate where are bagel dough will rise.
  • Eggs: You’ll brush your bagels with an egg wash prior to adding everything bagel seasoning.
  • Cream cheese: I used my favorite probiotic cream cheese from Nancy’s. And for the Strawberry + Peanut Butter Cream Cheese, I used organic strawberry jam and organic peanut butter. You can see how I mixed the ingredients in this video.

Equipment Needed for Sourdough Bagels

  • Dough Mixer or Mixing Bowl (by hand): You can prepare the bagel dough with either a mixer or by hand. Kneading the dough by hand is essential to the bagel making process (and my favorite part).
  • Dough Scraper: Used for dividing our dough.
  • Baking Pan
  • Baking Scale: ideal for accurate measuring of ingredients and to weigh dough balls after dividing to ensure they are similar in size.

Tips for Making Sourdough Bagels

What flour is best for this recipe?

A high-protein flour is needed for bagel making. You can use a white or whole wheat bread flour. King Arthur has a great bread flour that is usually widely available. I use this stone ground partially sifted whole wheat flour. I recommend using a blend of white bread flour and whole wheat flour.

How do I make just one Sourdough Bagel?

Ingredients for One Chocolate Chip Sourdough Bagel:
  • 100 g Bread Flour
  • 25 g Water
  • 25g Sourdough Starter
  • 2g Sea Salt
  • 1/8 – 1/4 Chocolate Bar Chunks or 1-2 TBSP Chocolate Chips

BAGEL RECIPE

  • 400g Bread Flour (A high protein flour is needed for bagel making. See notes for suggestions on what flour to use.)
  • 15g Honey
  • 180200g Water
  • 100g Sourdough Starter (Be sure you are using active sourdough starter (not discard.)
  • 10g Sea Salt
  • 1 Chocolate Bar or 1/41/3 Cup Chocolate Chips

ADDITIONAL INGREDIENTS

  • Olive Oil – Used to grease the bowl or plate where are bagel dough will rise.
  • Eggs – You’ll brush your bagels with an egg wash prior to adding everything bagel seasoning.
  • Cream Cheese – I used Nancy’s probiotic cream cheese. 


Instructions

  1. MIX DOUGH AND FIRST RISE: In a bowl or stand mixer, add flour, honey, sourdough starter, water, and salt. Place the dough hook on the mixer and mix the dough on the lowest speed for 3 minutes. Or mix by hand for a couple of minutes until a ball forms. Now, turn the dough onto a lightly floured surface and knead the dough for 3-4 minutes or until the dough is smooth. Lightly grease a bowl and place the dough inside. Cover the bowl with a lid, plastic wrap or a clean kitchen towel.  Let the dough rise at room temperature for 6 – 8 hours or until it doubles in size.
  2. OVERNIGHT RISE: Place your dough covered in the fridge for overnight proof. This is where your dough will develop flavor and L.A.B bacteria will get to work enhancing the nutrition of our dough. Remember, the longer we ferment the better for us it gets!
  3. DIVIDE AND SHAPE: Dump out and divide your dough into 8 pieces, you can eyeball it or weigh them out on a dough scale. Now using your palms, roll each piece of dough out into a rope about 6″ to 8″ long. Flatten the rope slightly with your fingertips and add chocolate chips. Now fold one side over the other and pinch so the chocolate chips remain secure on the inside. Use this video for reference on how to incorporate chocolate chips. Instead of shaping it into a heart, wet the ends of the rope slightly and overlap them, twisting them together. Put your hand through the hole in the center and gently use your palm to roll out the dough back and forth to seal them.
  4. FINAL (SHORT) RISE: Place your bagels on a parchment-lined baking sheet and cover with a towel or plastic wrap and let it rest for 1-2 hours or until puffy to the touch.
  5. BOIL BAGELS: Preheat oven to 450f. Fill a large, wide pot water and bring to a boil. Drop bagels in, 2-4 at a time, making sure they have enough room to float around. Cook the bagels for 1 minute on each side and remove with a slotted spoon; drain well. Place on baking sheets and brush with egg wash.
  6. BAKE: Bake bagels for 16-20 minutes or until golden brown on the outside.
  7. ADD CREAM CHEESE: Layer onto your bagel and enjoy every nourishing bite.
